Instructions

  • First, preheat your oven to 350 degrees Fahrenheit (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a microwave-safe dish, melt the coconut oil. This usually takes about 30 to 40 seconds.
  • Add 1 cup of chocolate chips to the melted coconut oil. Stir until the chocolate chips are completely smooth and melted. Set this mixture aside.
  • In the bowl of a stand mixer (or using a hand mixer), combine the eggs and sugar. Beat for 2 to 3 minutes until the mixture is light, thick, and frothy.
  • Pour the cooled melted chocolate mixture into the bowl with the beaten egg and sugar. Stir until well combined.
  • Next, add the vanilla extract, cocoa powder, cornstarch, rolled oats, brewer’s yeast, and sea salt. Stir until all ingredients are fully incorporated.
  • Gently fold in the remaining ⅓ cup of chocolate chips. The batter will be thick.
  • Spread the thick brownie batter evenly into the lined baking pan.
  • Bake for 24 to 25 minutes, or until the brownies are just barely set in the middle. Be careful not to overbake.
  • Remove from the oven and allow the brownies to cool completely in the pan for at least 1 hour before slicing and serving.

Notes

  • If desired, unsalted butter can be used as a 1:1 replacement for coconut oil, though this will make the recipe dairy-inclusive.
  • For a dairy-free recipe, ensure you use dairy-free dark chocolate chips.
  • Both regular granulated sugar and coconut sugar are suitable sweeteners.
  • Cornstarch, tapioca flour, and arrowroot starch are all excellent options for the gluten-free “flour” component.
  • Using old-fashioned rolled oats is highly recommended for the best texture; avoid quick oats.
  • The brownie batter will naturally be thicker than standard brownie batters.
  • Brewer’s yeast can be purchased online or at health food stores. While beneficial, it can be omitted if unavailable, but the lactation support might be reduced.
  • To ensure a fudgy texture, bake the brownies until they are just barely set in the center and avoid overbaking.
