  • 1 cup flour (gluten-free 1-to-1 flour or all-purpose flour)
  • ½ cup butter (room temperature, or vegan butter alternative)
  • ½ cup light brown sugar (tightly packed)
  • 2 tbsp granulated sugar
  • 1 tbsp milk (dairy or plant-based)
  • ½ tsp vanilla extract
  • pinch sea salt (omit if using salted butter)
  • ⅓ cup mini chocolate chips

Instructions

  1. First, heat treat the flour. Spread flour onto a parchment-lined baking pan. Bake at 350 degrees Fahrenheit (175°C) for 5 to 7 minutes, or microwave in 60-second increments until it reaches 165 degrees Fahrenheit (74°C). Let cool completely.
  2. In a stand mixer or with a hand mixer, beat room-temperature butter, granulated sugar, and brown sugar for 2 minutes or until light, fluffy, and no clumps of butter remain.
  3. Add in the cooled heat-treated flour, milk, vanilla, and sea salt. Stir on low speed until just combined and a cohesive dough forms.
  4. Next, gently fold in the mini chocolate chips until evenly distributed.
  5. Roll the dough between your hands into bite-sized balls.
  6. Finally, serve immediately for a soft treat, or refrigerate for a firmer texture.
