  • In a large mixing bowl or the bowl of a stand mixer, add the butter, granulated sugar, and light brown sugar. Beat until smooth and creamy.
  • Then, add in the egg, egg yolk, and vanilla extract. Beat until combined.
  • Sift in the flour and baking soda. Stir until a cohesive cookie dough forms.
  • Then, gently fold in the rice cereal until evenly distributed.
  • Use an ice cream scoop to scoop out balls of dough. Use your thumb to create an indent in the middle of each dough ball. Place 4 to 5 mini marshmallows into the indent.
  • Next, use your fingers to fully enclose the marshmallows with cookie dough. Roll the dough ball around in a shallow bowl of additional rice cereal until fully coated. Place the coated dough balls at least 3 inches apart on the prepared pan.
  • Bake for 9 to 11 minutes, until the edges are lightly golden brown and the marshmallow has melted into a gooey center.
  • Finally, remove the Rice Krispie Cookies from the oven. Cool on the pan for 10 minutes before carefully transferring to a cooling rack to cool completely.

Notes

  • Use room temperature unsalted butter for best results. Do not use melted butter. If you only have salted butter, omit any additional salt in the recipe.
  • Ensure you use 1 whole egg and 1 egg yolk for the perfect chewy texture.
  • For gluten-free cookies, use certified gluten-free rice cereal (e.g., The Real Cereal Company) as Kellogg’s is often not gluten-free due to malt flavoring.
  • This recipe is versatile and can be made with either gluten-free flour blend or regular all-purpose flour.
  • The cookie dough will be thick; this is normal and desired.
  • Crucially, fully enclose the mini marshmallows with cookie dough to prevent them from leaking out and burning during baking.
  • Avoid overbaking! The cookies should be soft and gooey in the center with melted marshmallows. They will set further as they cool.
  • Store cooled Rice Krispie Cookies in an airtight container at room temperature for up to 4 days.
