  • 2 ¾ cups gluten-free flour (or regular all-purpose flour)
  • 1 cup melted unsalted butter (or dairy-free butter)
  • ½ tsp baking powder
  • ½ cup pure maple syrup (or honey)
  • 1 tsp vanilla extract

Strawberry Filling

  • 3 cups fresh strawberries (or a combination of blueberries and raspberries)
  • 3 tbsp tapioca flour (or cornstarch/arrowroot powder)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp pure maple syrup (or honey)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 9-inch square pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, combine all the ingredients for the shortbread crust. Stir until the mixture comes together and resembles a soft cookie dough.
  3. Press ¾ of the dough evenly into the bottom of the prepared pan. Reserve the remaining ¼ for the crumble topping. Use a fork to poke holes across the surface of the pressed crust.
  4. Bake the crust for 8 minutes. Remove from the oven and set aside.
  5. In a separate clean bowl, combine all the filling ingredients. For a smoother texture, gently mash about half of the strawberries. Stir until everything is well combined.
  6. Pour the strawberry filling evenly over the pre-baked crust in the pan, spreading it into a consistent layer.
  7. Crumble the reserved ¼ of the dough mixture evenly over the top of the fruit filling.
  8. Return the pan to the oven and bake for 32 to 36 minutes, or until the topping is golden brown and the filling is bubbly around the edges.
  9. Remove the pan from the oven. Let the bars cool completely in the pan for at least 1 hour, then use the parchment paper overhang to lift the slab out and transfer it to a wire rack to cool fully.
  10. Once completely cooled, cut into bars and enjoy!

  • If you prefer, regular all-purpose flour can be used instead of gluten-free flour.
  • Honey can be used as a substitute for pure maple syrup in both the crust and filling.
  • The crust dough should have a consistency similar to classic sugar cookie dough.
  • Feel free to use a combination of fresh berries (like blueberries and raspberries) for the filling.
  • The bars are perfectly baked when the fruit filling is lightly bubbling at the edges and the crumble topping is a pleasing golden brown.
  • Allowing the bars to cool completely before slicing is essential for clean, firm cuts.
