Essential Ingredients for Your Perfect Gluten-Free Strawberry Galette
Crafting an exceptional gluten-free strawberry galette begins with understanding the role of each key ingredient. We’ve carefully selected components that work together to create a harmonious blend of flavor and texture, ensuring a delightful experience with every bite. Here’s a closer look at what you’ll need:
For the Flaky Gluten-Free Crust:
- **Almond Flour:** This is the foundation of our tender, gluten-free crust. Almond flour provides a rich, slightly nutty flavor and contributes to a delicate, tender crumb that’s a hallmark of delicious pastry. Choose a super-fine blanched almond flour for the best results.
- **Tapioca Flour (or Starch):** Crucial for gluten-free baking, tapioca flour adds elasticity and pliability to the dough, preventing it from becoming too crumbly or tough. It also contributes to the desired chewiness and helps the crust hold its beautiful free-form shape.
- **Coconut Sugar:** We use coconut sugar for its subtle, caramel-like sweetness, which is less refined than white sugar and adds a depth of flavor to the crust without being overpowering.
- **Cold Butter:** Absolutely essential for achieving that classic flaky texture. Keeping the butter very cold ensures that it creates pockets of steam during baking, which separate the layers of dough. For a dairy-free or Paleo-friendly option, ensure your chosen vegan butter alternative is also kept very cold.
- **Egg:** The egg acts as a binder, bringing the dough together and adding richness, contributing to the crust’s structure and overall mouthfeel.
For the Sweet & Juicy Strawberry Filling:
- **Fresh Strawberries:** The undeniable star of this galette! Opt for ripe, vibrant, and juicy strawberries. Wash them thoroughly, hull, and slice them to release their natural sweetness and aroma.
- **Coconut Sugar:** Enhances the natural sweetness of the strawberries, creating a perfectly balanced filling that isn’t overly saccharine.
- **Maple Syrup:** A touch of pure maple syrup adds a lovely depth of flavor and helps create a glossy, syrupy consistency for the filling, making it even more appealing.
- **Lemon Juice:** A small squeeze of fresh lemon juice is a game-changer. It brightens the flavors of the strawberries, provides a subtle tang that balances the sweetness, and helps prevent the filling from tasting flat.
- **Tapioca Flour (or Starch):** This is your secret weapon against a watery filling. Tapioca flour acts as a natural thickener, absorbing excess moisture released by the strawberries during baking, ensuring a beautifully set and luscious filling.
For the Golden Egg Wash & Finishing Touch:
- **Egg (for wash):** A whisked egg applied to the crust before baking creates a beautiful, golden-brown sheen and helps achieve those coveted crispy edges.
- **Coconut Sugar (for sprinkling):** A sprinkle of coconut sugar over the egg-washed crust edges adds a delightful sparkle, a hint of extra sweetness, and a pleasant textural crunch, making the galette even more irresistible.
Crafting Your Gluten-Free Strawberry Galette: A Detailed Recipe Guide
Follow these easy steps to create a show-stopping gluten-free strawberry galette that tastes as incredible as it looks. Precision and a bit of patience will ensure the best results!
Step 1: Preparing the Perfect Gluten-Free Galette Crust
Begin by making the foundation of your galette: the crust dough. In a large mixing bowl, combine the almond flour, tapioca flour, and coconut sugar. Stir these dry ingredients thoroughly until they are well blended. Next, add the six tablespoons of very cold butter, cut into small cubes. Using a pastry cutter, a fork, or even your clean fingertips, cut the butter into the flour mixture. Work quickly to prevent the butter from warming up. Continue until the mixture resembles coarse crumbs, with some pea-sized butter pieces still visible. The dough will appear crumbly at this stage. Gather the dough and wrap it tightly in plastic cling film. Refrigerate for at least one hour, or until the dough is thoroughly chilled. This chilling period is crucial for a flaky crust and easier handling.
Step 2: Chilling and Rolling the Dough to Perfection
Once your dough has had ample time to chill, preheat your oven to 375°F (190°C). Retrieve the cold dough from the refrigerator. Place the chilled dough between two sheets of parchment paper. Using a rolling pin, carefully roll out the dough into a circular shape, aiming for a thickness of approximately 1/4 inch. The parchment paper will prevent sticking and make the process much easier. Gently peel off and discard the top piece of parchment paper, leaving the dough on the bottom sheet. Carefully transfer this dough-on-parchment to a large baking sheet. If the dough cracks during rolling, don’t fret; simply use your fingers to press the cracks back together.
Step 3: Creating the Luscious Strawberry Filling
While your dough is resting or being rolled, prepare the vibrant strawberry filling. In a separate medium-sized bowl, combine your sliced fresh strawberries with two tablespoons of coconut sugar, one tablespoon of maple syrup, a generous squeeze of fresh lemon juice, and one tablespoon of tapioca flour. Gently toss all these ingredients together until the strawberries are evenly coated with the tapioca flour. This starchy coating is vital as it will absorb the juices released by the strawberries during baking, ensuring your filling thickens beautifully and prevents a soggy bottom crust.
Step 4: Assembling Your Rustic Galette
Now comes the fun part: assembly! Carefully spread the prepared strawberry filling over the rolled-out dough on your baking sheet. Be sure to leave a generous border of about 1 to 1.5 inches around the edges of the dough; this exposed dough will become your crust. Using the bottom piece of parchment paper to help you, gently fold the edges of the dough up and over the outer perimeter of the filling, creating a rustic, free-form crust. Don’t worry about making it look perfect; the charm of a galette is in its homemade, imperfect appearance!
Step 5: The Golden Finish: Egg Wash & Sugar Sprinkle
Once all the edges of your galette are folded up, prepare the egg wash. In a small bowl, whisk one egg until smooth. Using a pastry brush, lightly and evenly brush the whisked egg over the folded-up edges of the galette crust. This egg wash is essential for giving your crust a beautiful, rich golden-brown sheen during baking and contributes to its crispiness. Immediately after applying the egg wash, generously sprinkle one tablespoon of coconut sugar over the brushed edges of the dough. This adds a delightful crunch and an extra hint of sweetness.
Step 6: Baking to Golden Perfection
Carefully slide the baking sheet with your assembled galette into your preheated oven. Bake for approximately 24 to 26 minutes. The baking time may vary slightly depending on your oven, so keep a close eye on it. The galette is perfectly baked when the crust edges are beautifully golden brown, and the strawberry filling is bubbly, tender, and visibly thickened in the center.
Step 7: Serve & Savor Your Delicious Creation
Once baked, carefully remove the galette from the oven. Let it cool slightly on the baking sheet for about 10-15 minutes before attempting to move it; this allows the filling to set further. Then, carefully transfer it to a wire rack to cool completely, or serve it warm. This gluten-free strawberry galette is absolutely divine on its own, but it truly shines when topped with desired accompaniments such as a scoop of creamy vanilla ice cream, a dollop of homemade whipped cream (dairy or coconut-based), or a simple dusting of powdered sugar. Enjoy your masterpiece!

Pro Tips for a Flawless Gluten-Free Strawberry Galette
Even though galettes are known for their ease, a few expert tips can elevate your baking experience and ensure a consistently delicious result every time. Master these techniques for a truly exceptional gluten-free strawberry galette:
- **Keep All Dough Ingredients Cold:** This is arguably the most critical rule for achieving a wonderfully flaky crust. Cold butter, and even cold eggs or water if your recipe includes them, prevent the fat from melting into the flour prematurely. Instead, the butter melts during baking, creating steam pockets that result in those desirable flaky layers. Work quickly when cutting in the butter to maintain its cold temperature.
- **Don’t Overwork the Dough:** Mix the dough just until it comes together. Overworking gluten-free dough, much like traditional dough, can make it tough and compromise the tender texture you’re aiming for. A light touch is key for a delicate crust.
- **Embrace Parchment Paper:** Parchment paper is your best friend when making galettes. It prevents the dough from sticking to your work surface and rolling pin, makes rolling out the dough incredibly easy, and simplifies the transfer of the assembled galette to the baking sheet. It also aids in folding the edges without tearing.
- **Mind the Filling Border:** When spreading your luscious strawberry filling, always leave a generous border of about 1 to 1.5 inches of exposed dough around the edges. This ensures you have ample dough to fold over the filling, creating a beautiful and sturdy crust without compromising on the amount of fruit.
- **Embrace the Rustic Charm:** The very essence of a galette is its free-form, rustic appearance. Do not strive for absolute perfection! If your dough cracks while rolling, simply use your fingers to gently press it back together. Uneven folds or a slightly asymmetrical shape only add to its homemade appeal and character.
- **Adjust Sweetness to Taste:** The sweetness of strawberries can vary greatly depending on their ripeness and the season. Taste your strawberries before mixing the filling. You might want to slightly adjust the amount of coconut sugar or maple syrup to suit your personal preference and the natural sweetness of your fruit.
- **Prevent a Soggy Bottom Crust:** Tossing the sliced strawberries with tapioca flour (or cornstarch) is a crucial step. This starchy coating absorbs the excess juices that the fruit releases during baking, preventing your bottom crust from becoming soggy and ensuring a beautifully set, thickened filling.
Delicious Variations & Serving Ideas for Your Galette
While our Gluten-Free Strawberry Galette is utterly perfect as is, it also serves as a fantastic canvas for culinary creativity. Explore different fruit combinations or experiment with delightful serving pairings to make each galette experience unique.
Endless Flavor Combinations:
The beauty of a galette is its adaptability. Don’t limit yourself to just strawberries!
- **Mixed Berry Galette:** Create a vibrant medley by combining strawberries with other juicy berries like blueberries, raspberries, or blackberries. Each offers a unique burst of flavor and color.
- **Stone Fruit Delight:** In the peak of summer, substitute strawberries with thinly sliced peaches, plums, nectarines, or apricots. A hint of almond extract can beautifully complement these stone fruits.
- **Apple Cinnamon Galette:** For a comforting fall treat, use thinly sliced apples (like Honeycrisp or Granny Smith) spiced with warm cinnamon, a touch of nutmeg, and perhaps a drizzle of caramel.
- **Cherry Almond Galette:** Pit and halve sweet or tart cherries, then toss them with a splash of almond extract for a sophisticated and intensely flavorful filling.
- **Rhubarb Strawberry Galette:** Pair tart rhubarb with sweet strawberries for a classic spring combination that’s both refreshing and comforting.
Perfect Serving Pairings:
Elevate your galette experience with these delightful accompaniments:
- **Classic with Vanilla Ice Cream:** A warm slice of galette paired with a scoop of rich, creamy vanilla bean ice cream is an unbeatable, timeless combination. The contrast of warm fruit and cold ice cream is pure bliss.
- **Homemade Whipped Cream:** A dollop of freshly whipped cream adds a cloud-like lightness and a touch of indulgence. For a dairy-free or Paleo option, you can easily make coconut whipped cream by chilling a can of full-fat coconut cream and whipping the solid cream with a spoonful of honey and vanilla extract.
- **Dust with Powdered Sugar:** For an elegant and simple finish, a light dusting of powdered sugar (or finely ground coconut sugar for a Paleo-friendly option) adds a beautiful visual touch and a subtle extra sweetness.
- **Fresh Mint Garnish:** A few fresh mint leaves scattered over the galette can add a refreshing visual appeal and a delicate aromatic contrast that brightens the overall flavor profile.
- **Balsamic Glaze Drizzle:** For a more gourmet touch, a light drizzle of balsamic glaze over the strawberry filling before serving can provide a surprising depth and tangy counterpoint to the sweetness of the fruit.
Storage and Make-Ahead Tips for Your Gluten-Free Galette
Planning ahead or having leftovers? Here’s how to properly store your gluten-free strawberry galette and even prepare it in advance, making your baking day smoother and extending your enjoyment.
- **Storing Leftovers:** Once cooled, any leftover galette can be stored loosely covered at room temperature for up to 2 days. For longer freshness, transfer it to an airtight container and refrigerate for up to 4 days. The crust might soften slightly in the refrigerator, but the flavors will still be delicious.
- **Reheating for Best Results:** To enjoy a warm, crispy slice again, reheat individual portions in a toaster oven or conventional oven. Place slices on a baking sheet and warm at 300°F (150°C) for about 10-15 minutes, or until the galette is heated through and the crust regains some of its crispness. Avoid microwave reheating, as it can make the crust soggy.
- **Make-Ahead Dough:** Preparing the galette dough in advance is a fantastic time-saver. You can make the dough up to 2-3 days ahead of time. After preparing it as instructed in Step 1, wrap it tightly in plastic cling film and store it in the refrigerator. On baking day, simply remove it from the fridge and let it sit at room temperature for about 10-15 minutes to soften slightly before rolling it out.
- **Freezing the Unbaked Galette:** For ultimate convenience, you can freeze an unbaked galette. Assemble the galette completely on its parchment-lined baking sheet as directed (up to the point before brushing with egg wash and sugar). Place the entire baking sheet into the freezer until the galette is solid. Once frozen, carefully wrap the galette tightly in multiple layers of plastic wrap, followed by a layer of aluminum foil, to prevent freezer burn. It can be stored in the freezer for up to 1 month.
- **Baking from Frozen:** When you’re ready to bake a frozen galette, there’s no need to thaw! Simply remove the wrapping and place the frozen galette (still on its parchment paper) back onto a baking sheet. Brush with egg wash and sprinkle with coconut sugar. Bake at the same temperature (375°F / 190°C), but add an additional 15-25 minutes to the baking time, or until the crust is golden brown and the filling is bubbly and tender.
Frequently Asked Questions (FAQs) About Gluten-Free Galettes
Here are some common questions about galettes, especially the gluten-free variety, to help you become a confident galette baker!
What exactly is a galette, and where does it come from?
A galette, which derives its name from the French word “galet” meaning a flat pebble, is a rustic, free-form pastry that is essentially a pie baked without a dish. Unlike a traditional pie, a galette uses a single crust that is casually folded over a sweet or savory filling, leaving the center of the filling exposed. This gives it a charming, artisanal look. Our gluten-free strawberry galette focuses on a delightful fruit filling encased in a tender, flaky crust, celebrating the simplicity of French country baking.
What distinguishes a galette from a traditional pie?
The primary differences between a galette and a traditional pie lie in their structure, preparation, and aesthetic. Pies are typically baked in a pie dish, often featuring both a bottom and a carefully arranged top crust (or a decorative lattice top), aiming for a more structured and formal appearance. Galettes, in contrast, are baked free-form directly on a flat baking sheet, utilizing only a bottom crust that is loosely folded over the filling’s edges. This inherent “rustic” nature makes them significantly quicker and easier to prepare, as there’s no need for perfect crimping or complex pastry techniques.
What kinds of fillings can be put into a galette?
Galettes are incredibly versatile and can accommodate a wide array of fillings, making them perfect for any season or meal. Sweet galettes often feature fresh fruits like apples, berries, peaches, plums, or pears, typically mixed with sugar, spices, and a thickener. Savory galettes are equally popular and might include vegetables such as zucchini, tomatoes, mushrooms, asparagus, or spinach, often paired with cheeses, herbs, and sometimes a creamy base. For this particular recipe, we’ve chosen to highlight the sweet and juicy flavors of fresh strawberries, making it an ideal summer dessert.
Is galette dough identical to pie dough?
Yes, galette dough is very similar to classic pie dough in terms of its core ingredients and fundamental preparation techniques. Both typically call for cold fat (like butter), flour (or a gluten-free flour blend), a pinch of salt, and sometimes ice water to create a tender, flaky crust. The critical factors for success, such as keeping the fat very cold and avoiding overworking the dough, apply equally to both. For those specifically seeking a traditional gluten-free pie crust, our Paleo Pie Crust recipe is an excellent resource to perfect your gluten-free pastry skills.
Can I prepare the galette dough in advance to save time?
Absolutely! Preparing the dough ahead of time is a fantastic strategy for making baking day less stressful. You can make the galette dough up to 2-3 days in advance. After preparing it, simply wrap the dough tightly in plastic cling film and store it in the refrigerator. When you’re ready to proceed with baking, remove the dough from the fridge and let it sit at room temperature for about 10-15 minutes. This brief rest will soften it slightly, making it much easier to roll out without resistance or cracking.
How can I ensure my gluten-free galette crust is perfectly flaky and not tough?
Achieving that coveted flaky crust, especially with gluten-free dough, relies on a few critical factors:
- **Use Very Cold Butter:** Cut your butter into small pieces and ensure it’s kept extremely cold. These cold butter pieces create pockets of steam during baking, which separate the dough layers and result in flakiness.
- **Minimal Handling:** Work the dough as little as possible. Overworking the dough, even a gluten-free one, can make it tough. Mix just until the ingredients are combined and the dough comes together.
- **Ice Water (if applicable):** If your recipe requires water, use ice-cold water. This helps maintain the cold temperature of the butter and prevents it from melting before baking.
- **Proper Hydration:** Don’t add too much liquid. The dough should just come together and might still be slightly crumbly, not sticky or overly wet.
For our specific gluten-free recipe, the blend of almond and tapioca flours is chosen to naturally contribute to a tender, yet pliable, texture.
What are some popular toppings for a strawberry galette?
While a warm strawberry galette is absolutely delicious on its own, it’s often enhanced with complementary toppings. Popular choices include a generous scoop of creamy vanilla ice cream, which creates a delightful warm-cold contrast. A dollop of freshly whipped cream adds a luxurious and light touch (for a Paleo or dairy-free option, whisk a can of full-fat coconut cream with a spoonful of honey and a teaspoon of vanilla). A simple dusting of powdered sugar (or finely ground coconut sugar) adds an elegant finish, and a few fresh mint leaves can provide a refreshing visual and aromatic garnish.

Ingredients
Crust
- 1 1/3 cups almond flour
- 1/2 cup tapioca flour
- 1 tbsp coconut sugar
- 6 tbsp cold butter
- 1 egg
Strawberry Filling
- 2 cups strawberries
- 2 tbsp coconut sugar
- 1 tbsp maple syrup
- squeeze lemon juice
- 1 tbsp tapioca flour
Egg Wash
- 1 tbsp coconut sugar
- 1 egg, whisked
Instructions
-
First, prepare the crust dough. In a large mixing bowl, combine all crust ingredients except the cold butter. Stir them together until well blended.
-
Using a pastry cutter or a fork (or your fingertips), cut the cold butter into the flour mixture until it resembles coarse crumbs. Be careful not to overwork the dough. Wrap the crumbly dough tightly in plastic cling wrap and refrigerate for at least one hour, or until thoroughly chilled.
-
Once the dough has chilled, preheat your oven to 375°F (190°C). Place the chilled dough between two sheets of parchment paper. Roll out the dough into a circular shape, approximately 1/4 inch thick. Carefully remove the top piece of parchment paper, keeping the dough on the bottom sheet. Transfer the dough on its parchment paper to a baking sheet.
-
Next, prepare the delightful strawberry filling. In a separate bowl, combine all the filling ingredients: sliced strawberries, coconut sugar, maple syrup, a squeeze of fresh lemon juice, and tapioca flour. Gently toss everything together until the strawberries are evenly coated with the tapioca flour, which will help thicken the juices during baking.
-
Carefully spread the prepared strawberry filling over the rolled-out dough on your baking sheet. Be sure to leave a generous border of about 1 to 1.5 inches around the edges of the dough. Using the bottom piece of parchment paper to assist you, gently fold the edges of the dough over the filling, creating a rustic, free-form crust. Don’t worry if it’s not perfectly symmetrical; the charm of a galette is in its homemade look!
-
Once all the edges are folded up, prepare the egg wash. In a small bowl, whisk one egg until smooth. Using a pastry brush, lightly brush the whisked egg over the folded-up edges of the galette crust. This egg wash will give your crust a beautiful golden sheen.
-
Immediately after applying the egg wash, sprinkle a tablespoon of coconut sugar generously over the brushed edges of the dough. This adds a lovely crunch and extra hint of sweetness.
-
Place the baking sheet with the galette into your preheated oven. Bake for approximately 24 to 26 minutes, or until the crust edges are beautifully golden brown and the strawberry filling is bubbly and tender.
-
Finally, remove the galette from the oven. Let it cool slightly on the baking sheet before transferring to a wire rack. Top with your desired accompaniments, such as vanilla ice cream or coconut whipped cream, and serve warm or at room temperature. Enjoy your delicious gluten-free strawberry galette!
Notes
- The crust dough will naturally be crumbly initially. Ensure it is well-chilled in the refrigerator before rolling for easier handling.
- If the dough cracks while you are rolling it out, don’t worry! Simply use your fingers to gently press the cracks back together to mend them.
- When spreading the strawberry filling, always leave at least one inch of dough exposed along the edges. This allows sufficient dough for folding.
- The bottom piece of parchment paper is invaluable. Use it to help you carefully lift and fold the edges of the dough over the filling without tearing.
- For a dairy-free option, use a high-quality cold vegan butter substitute in the crust.
- Adjust the amount of coconut sugar in the filling based on the sweetness of your strawberries and your personal preference.
