  1. First, preheat your oven to 350 degrees Fahrenheit (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl (or a stand mixer), add the room temperature unsalted butter, granulated sugar, and light brown sugar. Beat until the mixture is light, creamy, and no clumps of butter remain.
  3. Next, add in the whole large egg, the additional egg yolk, and the pure vanilla extract. Beat these wet ingredients until they are fully mixed and incorporated into the creamy butter mixture.
  4. Sift in the gluten-free flour and baking soda. Stir gently until a cohesive cookie dough forms, being careful not to overmix.
  5. Then, add all your fantastic mix-ins: the gluten-free rice cereal, mini marshmallows, crumbled gluten-free Oreos, gluten-free corn flakes, dark chocolate chips, and gluten-free granola. Stir everything together until the mix-ins are evenly distributed throughout the dough. The dough will be quite thick due to all the additions.
  6. Use an ice cream scoop to portion out balls of dough. Crucially, use your hands to roll each scoop into a tight, compact ball. This step helps the cookies hold together during baking. Place each dough ball at least 3 inches apart on your prepared baking sheet.
  7. Bake for 9 to 11 minutes, or until the edges of the cookies are lightly golden brown, but the centers still appear slightly soft and gooey.
  8. Finally, remove the baked gluten-free kitchen sink cookies from the oven. Let them cool on the baking pan for at least 10 minutes before carefully transferring them to a wire cooling rack to finish cooling completely. Enjoy!

Notes

  • Always use room temperature butter. Never use melted butter, as it will drastically change the texture of your cookies and cause them to spread too much.
  • If you only have salted butter on hand, that’s perfectly fine. You can simply omit any additional salt called for in the recipe to avoid over-salting.
  • It is important to use the combination of 1 whole large egg and 1 additional egg yolk for optimal richness and chewiness in these cookies.
  • Be mindful that not all rice krispie cereals are gluten-free. For instance, Kellogg’s Rice Krispies are NOT gluten-free. Always choose a certified gluten-free brand, such as The Real Cereal Company rice cereal, or other verified gluten-free crispy cereals.
  • The dough for these cookies will be very thick due to all the wonderful mix-ins. Make sure to firmly roll each portion into a tight ball with your hands before baking to ensure the cookies hold their shape and prevent the additions from “leaking” out.
  • Do not overbake! These cookies are meant to be soft and delightfully gooey in the center. They will continue to set as they cool on the baking sheet and cooling rack.
  • Store any leftover cookies in an airtight container at room temperature for up to 4 days to maintain their freshness and soft texture.
