This S’mores Pizza is such a fun dessert! It features a thick soft pizza crust, smooth melted chocolate, marshmallows, and crumbled graham crackers. Kids and adults love it!

Ingredients

Gluten Free Pizza Crust

  • 2 ⅓ cups gluten free pizza flour, see note
  • 1 ¼ cups warm water
  • 1 tbsp granulated sugar
  • 1 tbsp olive oil
  • 2 tsp instant yeast
  • 1 tsp salt

Toppings

  • 1 cup dark chocolate chips
  • 2 cups mini marshmallows
  • 1 cup gluten free graham cracker crumbles

Instructions

  • First, prepare the pizza crust. In the bowl of your stand mixer, add all of the listed pizza crust ingredients. Beat for 1 minute or until the dough is smooth and sticky.
  • Scrape down the sides of the bowl. Cover the bowl with a towel and let rise for 60 minutes in a warm place. Then, refrigerate for 30 minutes to firm up the dough.
  • Preheat the oven to 500 degrees Fahrenheit (260°C). Line a baking pan with parchment paper for easy handling and cleanup.
  • Divide the prepared dough into two equal balls. Save one for later use by wrapping it tightly and refrigerating or freezing.
  • Place one ball of dough on the parchment paper-lined pan. Lightly grease your hands and press the dough into an even 10-inch circular crust.
  • Bake the crust in the preheated oven for 10 minutes until lightly golden. Remove the pan from the oven.
  • Immediately top the hot crust with the chocolate chips, spreading them evenly as they melt. Then, sprinkle the mini marshmallows generously over the melted chocolate layer.
  • Return the pizza to the oven for 5 to 7 minutes, or until the marshmallows are puffed up and beautifully toasted golden brown. For extra char, use a kitchen torch if desired.
  • Remove the S’mores Pizza from the oven. As the final touch, generously sprinkle with graham cracker crumbles. Let it cool for a minute or two before slicing and serving warm.

Notes

  • I highly recommend the gluten-free Neapolitan pizza crust recipe from King Arthur Baking Company for optimal results.
  • The prepared dough yields enough for two standard-sized pizza crusts, allowing for a second batch or freezing for later.
  • Important Note for Wheat Allergies: Be aware that some “gluten-free” pizza flours contain processed wheat starch (like the King Arthur blend). While gluten is removed, it is NOT wheat-free. If you have a wheat allergy, please select a wheat-free gluten-free flour blend.
  • Gluten-free pizza dough will rise, but generally not double in size like traditional wheat-based doughs. Expect a noticeable, but not dramatic, increase in volume.
  • Customize your chocolate! Milk chocolate chips or semisweet chocolate chips can be used instead of dark chocolate chips for a different sweetness level.
  • Store any leftover S’mores Pizza slices in an airtight container at room temperature for up to 48 hours. Reheat gently for best enjoyment.
